Review: Mindful Chef

A quick life update: still no hospital appointment for my cataract. So far, it's been eight weeks since I was referred, so it's taking a while. I'm hoping that things will move fast after the initial hospital appointment.
As far as reading and writing goes, I'm currently listening to the audiobook of Into the Woods: How Stories Work and Why We Tell Them, by John Yorke. I'll do a review of that once I finish it, but it's been very good so far.
Fiction wise, I normally read science fiction. However, I'm trying to expand my horizons, so I've listened to a couple of audiobooks in the fantasy genre, Storm Front and Fool Moon, both by Jim Butcher. They were fun, and next I'm going to listen to The Blade Itself, by Joe Abercrombie, which gets great reviews.
This week, I wanted to talk about food. During the pandemic, I think most people were getting food delivered from the supermarket rather than going out shopping. We did that, but we got frustrated with ingredients not being available. As a result, we looked at meal-kit delivery services. These can work out more expensive, but (at least in theory) you get all the ingredients you need to make a meal. They can also make your diet more varied, as you can try out new recipes.
We initially used Hello Fresh, but they seemed to have an issue with sourcing ingredients. Sometimes ingredients were substituted with other inappropriate ingredients, and sometimes there were just missing ingredients, which defeated the purpose. We also tried Green Chef and Gousto.
We have eventually settled on Mindful Chef, and have been using them for a long time. Mindful Chef are a little more expensive than the others, but we've found that they are far more reliable, and the ingredients are of far better quality. They seem like a far healthier option - no refined carbs, all recipes are gluten free, British chicken, grass-fed native breed beef and MSC sustainably caught fish. Everything is pre-measured, so there is no waste.

This dish costs £20 (£10 per person) and is one of the more expensive dishes. We had a similar dish from Gymkhana a few nights ago, which was delicious. A good alternative to a takeaway, I think. This is my (non-professional) photo of the completed dish.

We both really enjoyed this dish, but I don't think we've ever been disappointed by a recipe from this company.
